Mexican Fiesta

Thanks for your welcomed comments on my low cal chocolate pie recipe in the last issue.  According to your response it was a hit!!
This issue we are going Mexican in honor of Cinco de Mayo on May 5th.  I know my youngest daughter Alyssa will be celebrating with her Spanish Class and so many of you like a reason to celebrate as well.
My daughter, Ashley loves to cook like her Mama and she loves to create her own recipes.  A couple years ago she invited her Dad and I to dinner and she prepared the recipe I am about to share with you.
This is a quick fix meal that feeds a lot.  I think you will enjoy Ash's Mexican Meal. So put on a sombrero and salsa music and Tiene un buen dia y vamanos comer! (Have a nice day and let's get cookin!)

Ash's Mexican Meal


1 pound ground beef          
1 can refried beans
1 sm. Onion (chopped)                                   
1 pkg. flour tortillas
1 pkg. taco seasoning  
salsa
1 pkg. Mexican blend cheese


  Brown beef and onions together and drain.  Add taco seasoning, refried beans and 1/4 of cheese blend and mix until cheese is melted.
Set aside.  In frying pan cover bottom with oil and heat to med. high. Fry flour tortillas one at a time and drain on paper towels. (These will fry
quickly)
Spread beef mixture on tortilla, top with more cheese and salsa.
